I’m out of ideas! Anyone have a favourite cake they could suggest my family might like please.

Financiers, if you love almond cakes. I'm not allowed to make them as they're one of the few sweet things I can stop eating...

BTW have made with gluten free flour and no difference at all.

INGREDIENTS
180 grams unsalted butter
200 grams sugar
100 grams ground almonds
6 large egg whites
90 grams plain flour

DIRECTIONS
Put the butter in a small saucepan and bring it to the boil over medium heat, swirling the pan occasionally. Allow the butter to bubble away until it turns a deep brown, but don't turn your back on the pan - the difference between brown and black is measured in seconds. Pull the pan from the heat and keep it in a warm place.
Mix the sugar and almonds together in a medium saucepan. Stir in the egg whites, place the pan over low heat, and, stirring constantly with a wooden spoon, heat the mixture until it is runny, slightly white and hot to the touch, about 2 minutes. Remove the pan from the heat and stir in the flour, then gradually mix in the melted butter. Transfer the batter to a bowl, cover with plastic wrap, pressing it against the surface of the batter to create an airtight seal, and chill for at least 1 hour. (The batter can be kept covered in the refrigerator for up to 3 days.)
Center a rack in the oven and preheat the oven to 200 degrees C. Butter 12 rectangular financier moulds, dust the interiors with flour and tap out the excess.
Fill each mould almost to the top with batter. Slide the moulds into the oven and bake for about 13 minutes, or until the financiers are golden, crowned and springy to the touch. If necessary, run a blunt knife between the cookies and the sides of the pans, then turn the financiers out of their moulds and allow them to cool to room temperature right side up on cooling racks.

Once a week I do a bake off thingy (supplies allowing).
New family lockdown favourite is muffnuts / duffins - so easy. I have PB&J, DC Nutella, DH strawberry jam.

Homemade Hobnobs.

Nigella cherry and almond cake / loaf. Only made once because I can't get glace cherries. I was lovely.

I do like a coffee walnut cake.

Pineapple upside down cake! Must have glacier cherries in centre of pineapple rings!

Please bake and deliver to my house as I hate baking but love pineapple upside down cake 😁

@WisestIsShe - here's a link, they are usually small and cuboid. Basically they need to be small as the cake is so rich You could use a muffin tin but only fill up so far?

Rose and cardamom cake 😍😍

This chocolate cake is fantastic And really easy to make but it’s not kidding when it says the mixture is very liquid when it goes in the oven, I thought I’d cocked it up but it turns out beautifully every time

Substituting their berries for tinned tropical fruit or (frozen) strawberries usually causes drooling from anyone lucky enough to get past DS to get some.

Makes 8, 190° for about 20 mins. Usually thing of adding wet ingredients to dry.

125ml Milk.
85ml Veg Oil
1 Egg
Half tsp Vanilla Extract.
200g SR Flour
100g Caster Sugar
Filling of your choice

For the topping

60g Melted Butter
60g Caster Sugar

I have ran out of oil and so used about 85g of butter and they worked beautifully.

My top tip is to dollop the muffin case, make a divot in the middle, add filling and another dollop.

I don't have a muffin tin so used fairy cake moulds. I used a few cases so they'd stand up and made about 10.

I'm going to add cinnamon to the sugar next time.

That fruit drizzle cake looks heavenly. I’m not a baker but have frozen berries and tinned pineapples to choose from. I only have plain flour though.If the recipe calls for self raising how do I work around this? I have bicarbonate of soda, and that tasted awful when I attempted soda bread.

Muffins, especially banana, carrot or chocolate chip. Make them all the time.

You don’t have any biscuits on your list! Favourites are choc chip or oat and raisin or hazelnut and raisin.

Cinnamon buns if you’ve got a bit more time.

Have also made coffee and walnut cake this lockdown, just because why not.

I made battenburg for the first time a couple of weeks ago and was very pleased with myself!
