Red Velvet Cake

Hello
My lovely DD has asked for a red velvet cake for her birthday next week.
I've never tasted one, let alone cooked one, so I'm looking for tried and tested recipes.
There are loads online, but all different - it's knowing which one to choose.
So if you have a recipe you like, I would be very grateful if you would share, pretty please.

I'm not clever enough to link on the app but Nigella has never let me down for red velvet. Really easy to make

The hummingbird bakery recipe is really good, they cream cheese frosting is the best ever!

My only experience if that you need specific gel colouring to have any effect. I used bog standard supermarket liquid colouring. The raw mix looked great and a lovely red colour. Once cooked though, it was a sad grey colour Confused

In lieu of getting the gel from a specialise shop/online, I'd buy the betty croker (or similar) packet mix.

The red colour which defines red velvet cake came from the reaction of sodium bicarb with natural cocoa (sold as cacao and readily available now). When it was not as readily available, the version which was available was Dutch processed cocoa which is alkalinised so does not have the same reaction, hence the necessity of food colouring.

Stella Parks (Brave Tart) has a brilliant recipe for red velvet cake which does not have food colouring in it and a rich flavour using wine. I highly recommend this (and all of her) recipe(s). www.splendidtable.org/recipes/red-wine-velvet-cake
