Black bean and vegetable chilli - adapted a bit from a recipe on a thread here recently. Massive amounts of veg in it, so healthy, and very tasty. I think I used red onion, garlic, celery, carrot, chilli, aubergine, mushroom, green pepper, red pepper, courgette, sweet potato. Flavoured with oregano, basil, cumin, coriander, salt, black pepper and smoked paprika, finished with vegetable stock, sundried tomato paste and chopped tinned tomatoes. I like black beans and they're attractive against the other colours but any beans would be fine here, or a mixture, or lentils.
I got a bit carried away with quantities so although there was a huge amount of vegetable preparation and chopping, it made enough for three meals. We had it once with rice, I froze enough for another meal and the third portion got re-heated in the oven with some leftover boiled potatoes chopped and mixed through and grated cheese over the top. That was lovely. Didn't bother with the rice that time and served it with salad.
