what can I do with rainbow trout fillets

DH panic-bought them at start of lockdown when the shops were bare and stuck them in the freezer. I got them out to cook today but they are paper thin. I can't roast them like salmon as they will dry up, and DS hates poached fish, and isn't keen on fishcakes either, just to be awkward.

Any ideas? Any recipes? Thanks

Cook it en pappillote with whatever aromatics you have to hand. Or just pan fry. You could lightly flour it beforehand if you’re going to fry it. You can also bake, they just won’t need much time at all.

Marinade in soy sauce, spring onions, seasme oil, garli and ginger.

Pan fry in frypan

Serve with rice and veg

Or make a mousse/pâté for lunch! Lovely on crackers with quick pickled cucumbers.

Oh thank you. Lots of great ideas. I need them for dinner tonight but I do fancy making a pate at some point. (Now drooling at the memory of my sister's home smoked home made mackerel pate)
