Easy cheesecake recipe

Does anyone have a no bake one please? The various ingredients I have are 2 tubs of Philadelphia, double cream, biscuits, chocolate chips, frozen smoothie fruit, granulated sugar, lemon juice but no vanilla
essence.

Surely a cheesecake is possible from a combination of this stuff? (Feeling hopeful as I love cheesecake) Grin

The Philadelphia website has loads on. The Mary Berry white chocolate and raspberry recipe is my favourite ever but you might struggle to substitute in with what you have!

Replacing the marscapone with more cream cheese and cream and the frozen fruit on top? And lemon juice instead of orange zest. If you don't have butter for the base, just crush up the biscuits and put them in the bottom of a glass/ramekin and make individual portions.

I looked at the Philadelphia one but I don't have vanilla extract or icing sugar, only granulated.

The orange one is a possibility. Am I ok to use granulated sugar instead of caster or icing though or would it be too grainy?

This is a really easy lemon cheesecake, if you have a tin of condensed milk...

200g digestive biscuits, crushed
60g butter
405g tin condensed milk
200g cream cheese
150ml double cream
Juice of 3 unwaxed lemons

Melt the butter and mix in the biscuit crumbs. Press into the base of a 20cm springform cake tin to form a crust and chill it while you make the filling. Whisk the condensed milk and cream cheese together until smooth. Mix in the cream and then add the lemon juice. Stir well, but quickly as it will start to thicken immediately. Pour the filling over the base and leave it in the fridge to chill.

Just put your granulated sugar into a bag, or between some foil and roll it with a rolling pin...you have caster sugar. We used to do that when I was a child and we were making cheesecake lol.

Very easy recipe - you can alter ingredient amounts to suit e.g. more biscuits for larger base. I put in more lemon juice because I like it zestier and more butter for less crumbly base.

150g biscuits
2 tblsp melted butter
200g Philadelphia
125g cream
50g castor sugar

Blitz biscuits in blender (or crush with rolling pin.) Mix in melted butter and put mix into flan case/shallow dish - flatten with spoon.
Mix Philadelphia with sugar. Stir in grated lemon rind and juice.
Whip cream and fold into mix - spread over biscuit base and chill.

Whiz granulated sugar in a blender for 1-2 mins to reduce it to caster sized pieces.
