I agreed to make some banana muffins tonight for a picnic tomorrow which will include some children with egg allergy, and I know Nigella's recipie doesn't have eggs. And is so easy to make. I've done it loads of times before but we've just moved house and the book is buried in a box somewhere. Can someone PLEASE, PLEASE oblige with the quantities in the recipie?

Thank you in advance. You will save the picnic!

2 large bananas

As my oldest child would say, because she is obsessed with Granny Murray, "You have saved the day!"

A year later - searching for banana muffin recipe, I hit this... can anyone please tell me the method? I have two v ripe bananas at home....

Oven 190/gas 5

Butter, honey and vanilla in pan to melt.

Mash bananas then add butter mix.

In a bowl mix dry ingredients.

Add wet to dry and stir a couple of times - it's supposed to look lumpy!

Put into 12 muffin cases and cook for about 25 mins.

Voila!
