Bought mince from butchers 4 days ago. I have only ever bought mince from supermarket, first time buying from local butcher. After researching online it appears that it should have been used within 1/2 days due to it not being packed like the supermarket pack it. It smells fine, a deep red colour in the middle although the outside of it has turned a deep purple / dark red colour, no slime & the texture feels the same as supermarket bought mince, it smells fine .... would you use it / cook it to eat today? TIA .

It's been refrigerated the whole time as I would supermarket bought mince.

Looks fine. Smells fine. Feels fine.
Yes, I'd cook it today.
And I'd also cook then put in the fridge for a day or two if that works better for you.

The outside has just oxidised a bit.Basically the red pigment in blood changes colour when it is in contact with air.
