...do you have the same vegetables most weeks or change it up? Just being nosy. We have carrots, peas, and potatoes in some form as standard then vary between broccoli, parsnips, green beans, and cauliflower.

We generally have potatoes, carrots, sweetcorn, broccoli and parsnips. Occasionally also red cabbage if we are having pork

ilovemydogandMrObama · 20/04/2020 08:59

Really try to vary - yesterday had:

sweet potato rosti
spiced red cabbage
Kale with a tahini dressing - but I was the only one who ate it Smile

Elouera · 20/04/2020 09:02

We vary the veg. Until a month ago, we were on a keto diet, so no potatoes then. Now eating whatever veg we can get.
Roast chicken yesterday, so had:

  • peas
  • mashed celeriac
  • carrots
  • parsnip
  • sweet potato and potato bake
  • broccoli and leek cheesy bake
  • baked onions to use in the gravy

We tend to stick to '2 roast veg and a green veg'

So normally it's roast parsnips and carrots, and brocolli or green beans. I know my 2 year old will eat all of that so it works for us!

DeltaFlyer · 20/04/2020 09:06

Always have carrots, green beans and broccoli as they're the only veg dh and ds will eat.
I'll switch between types of potatoes as dh prefers boiled but I like mash and ds prefers roasties.
Then I do a different veg for me each time to have variety such as cabbage, cauliflower, leek, parsnip

Orangesox · 20/04/2020 09:09

At the moment we’re sticking carrots and petit pois as we can reliably get them, and they keep well in the fridge or freezer. They tend to feature in every single vegetable based meal.

DH usually has Brocolli when we can get it (I’m intolerant), I will have extra of the other veg. Seasonally we have green beans from FIL’s garden, caramelised leeks, turnip roasted beetroot etc.

We vary it depending on what we're roasting, the time of year and what's also being served. We generally always have roast potatoes (although occasionally something like a potato gratin if we're feeling fancy) but other than that, anything goes. In the summer, we tend to go more towards salady type veggies whereas in the winter it's more things like cauliflower cheese and roasted veggies.

WaterIsWide · 20/04/2020 09:10

We have a roast every week. Yesterday was lamb. We always have the same three vegetables, carrot broccoli and cauliflower. I have a weekly, 'guest veg' which will be cabbage one week or green beans the next or sprouts the next week. Roast potatoes and roast parsnips are non-negotiable. Well, unless it's summer and the parsnips aren't great.

Elouera - you do loads of side dishes. All sound yummy.

I love to have peas with lamb and cabbage when we have roast pork.

yikesanotherbooboo · 20/04/2020 09:24

We have whatever is in season eg carrots and parsnips in the winter and move on to cabbage and broccoli. I like something green on the plate so add frozen peas or broad beans if needed.

movealongnothingheretogawpat · 20/04/2020 09:56

Every thing varies except roast spuds - let's face it roast spuds are the whole reason I make a roast dinner , meat varies most times and I use veg that's either in the fridge and needs using up or buy it

Friendsofmine · 20/04/2020 10:10

Always vary the veg and thinking about it the only staple is a roast potato (although change up the herbs and seasoning) and a yorkshire pud.

My partner is of the only with beef brigade usually but even he relented due to the virus and craving small pleasures!

Catty15 · 20/04/2020 10:33

We always have roast potatoes and parsnips , mashed potatoes, broccoli, carrots, leeks in cream, peas.
We also sometimes have red cabbage, spring greens, cauliflower cheese, green beans.
We all love roast dinner, it's one of the few meals everyone eats so I do lots of veg so theres something for everyone.

guineapig1 · 25/04/2020 22:34

We always do roast potatoes and parsnips and mash (or new if in season) and tend to do peas and carrots too.

For us the rest of the veg depends on the meat! So...

Beef: swede, cauliflower cheese, spring greens/savoy/braised red cabbage

Lamb: broccoli, a gratin of some sort -maybe celeriac or sweet potato or turnip, possibly asparagus or roast Jerusalem artichoke if available

Chicken: swede, greens (cabbage/broccoli/shredded sprouts)

Pork: cabbage (braised red or green), sweet potato (either roasted or mashed or sometimes dauphinoise) possibly some kind of green bean
