So I have self raising flour, eggs, butter, sugar, 3 small bananas and could melt chocolate from Easter eggs.

I also have ground ginger and vanilla pods but no essence.

I have no jam or icing sugar. What could I bake please?

Drop scones

Eve's pudding

Banana bread

Baked egg custard (without pastry case).

That's banana bread with chocolate chunks. (Roughly chop up the Easter egg with a knife on cutting board)
Food processor or mixer in this order:
125ml butter OR marge OR olive oil
250ml granulated sugar
2 eggs
250ml mashed ripe bananas (3 medium)
500ml SR flour
UNTIL VERY SMOOTH
If you want to: add cinnamon, ginger, clove, nutmeg 1/2tsp each
Fold in up to 200g chopped chocolate pieces
Put into two 8x4x4inch loaf pans (greased and floured or lined with baking paper)
35 ish minutes at 170C fan
If you don't have SR use
500ml plain, 1tsp bicarbonate of soda 1/2tsp each baking powder or salt.

I'd do banana bread but wouldn't bother adding sugar.

Apple loaf:
Beat together
125ml butter OR marge
250ml granulated sugar
2eggs
1tsp vanilla
Coarsely grate 250ml unpeeled apple into the mix
Mix in a different bowl:
500ml SR flour
125ml chopped nuts (or not)
Make a well in dry bowl mix
Pour wet mix into dry
Stir only until moistened
Large (23x12x7cm) loaf tin (or two smaller loaves - adjust times)
180C about one hour
Check after 50minutes (dry skewer)
Let stand at least ten mins before you remove from pan to cooling rack.
