I was taught this recipe by someone who was born in Bangladesh and it’s pretty simple to make.
1 onion sliced finely
Red lentils (soaked then washed)
Bit of ginger, squashed (optional, I don’t add it)
Garlic cloves (3+ depending on how garlicy you like it), squashed or very finely chopped
Coriander, chopped
Oil or ghee
Salt to taste (add at end)
Green chilli (if you want it hot)
Add lentils and onions in a big pan half filled with water,
If you’re adding chillies cut the tops off then slice in half or if you want it hotter slice into little pieces,
Simmer on very low heat until almost all water has gone,
Stir or mash then add boiling water, stirring until it’s the thickness you like,
In another pan add oil or ghee,
When it’s hot add garlic and stir constantly, not allowing it to burn but so it’s brown,
Pour some of the lentil mix into the garlic and oil/ghee pan,
Warning...a big cloud of strongly smelling garlic will escape so keep doors closed and windows open.
Transfer garlic, oil/ghee and bit of lentil mix back into your main lentil mix pan,
Add coriander,
Salt to taste.
