Iceberg lettuce

Thanks to our regular veg box I find myself with three iceberg lettuces plus assorted other (frankly more exciting) salad leaves.

What on Earth can I do with such an abundance of iceberg?

make iceberg lettuce soup (is nicer than it sounds), lettuce slaw, iceburgers and taco lettuce wraps x

Slice iceberg (little hen etc) and wilt in butter, add frozen (or fresh) peas and stir til most of the juices have evaporated.

Optional extra dry fry lardons first, then add butter and wilt the leaves.

Delicious.

Iceberg is also good used as wraps or ‘cups’ in Thai/Vietnamese recipes such as this.

Braising is a good alternative to using it in salads. Can be really tasty too. Not done it myself but you can also stir fry with it.

Might try a few of these to use it up. Love the idea of using it as wraps/cups.

We enjoy 'braised lettuce' especially the version with small pieces of bacon and peas, as a vegetable with, well, anything really: steak, chops, escallops, fish . pretty much anything, as an alternative to say, just peas.
