Left-over wine

I have never experienced this before so don't know what to do.

I found a half-full bottle of Primitivo (same as Shiraz) that had been put aside with the top on. Probably 2 weeks.

Doesn't taste "off" but not very nice. Makes me think of Communion wine. Maybe a touch of raisin on the nose.

Can I use it in the sauce of a pot roast, or will it spoil it?

I freeze left over wine to use in gravy, sauces etc, works perfectly.

If you won't drink it, don't cook with it is the general rule.

Google red wine vinegar and start a batch off of that instead.

I'd put it in either a tomato pasta sauce or bolognese type dish. Simmer for a good hour or two.

I save red wine for ages to use in cooking. In a bolognaise sauce or a casserole or something, it'll be absolutely fine.

I use red wine in cooking. If in doubt throw it out.
