Salmon going out of date

pissedoffwithprojects · 07/04/2020 14:29

I have 4 salmon fillets that I was going to cook with a soy and ginger glaze but I've got my dates mucked up and have two things needing used by the end of today. Can I have people's suggestions for what to do with the salmon fillets today for eating tomorrow? I have no room in the freezer so that's not really an option.

Marinate them in the soy and ginger glaze today, put in fridge, eat tomorrow.

What's the other thing that needs using up? If you can't eat the salmon today I'd cook it today and have it cold tomorrow with salad, or use it to make fishcakes.

Cook it today, it'll be fine tomorrow. And probably still would be uncooked tbh. Or cook it lunchtime tomorrow for the evening if you don't want to today.

The other thing is a prepared Balmoral chicken thing that can't be frozen, so I think the salmon will be easier to do something with. I was thinking cook it today, so salad and fish cakes both sound good. Any top recipe suggestions welcome!
