It's my son's 1st birthday soon and we want to have a little celebration in lieu of his party :(. I was going to make a cake but I used up my shopping trip this week already and there were no eggs! Don't want to go out again.

Any recommendations for cakes without eggs?

Oh, not really a birthday cake bur scones don't need egg & this is a great recipe. Use milk for the egg wash. I would be happy for one on my birthday at the moment!

I think some devils food chocolate cake recipes are with oil, instead of eggs. Might be a bit rich for a first birthday though

Google crazy cake. It's brilliant if you're lacking basic ingredients. I make it all the time when I want cake on a whim and don't have eggs.

GoogleTesco vegan Victoria sponge recipe. It makes about 4 layers so you could probably half the recipe if your tins are not that big. Or make it in a high sided baking tray and cover in glace icing and sprinkles once cool.

You can replace eggs with vinegar in sponge cake. 1 tblsp of vinegar per egg in the recipe. I don't know the science & have only ever tried it with chocolate cakes (vinegar flavoured Victoria sponge doesn't appeal).

Jenny Jones makes a lovely vegan chocolate cake on YouTube. No eggs or butter, think she used olive oil. Take a look it looks really moist

You can make a lovely fruit cake without eggs. You use vinegar and bicarbonate of soda instead of eggs.
Have a look in Waitrose website recipes for Norfolk Vinegar Cake, or Google The Guardian article on Vinegar Cakes.

Vinegar cakes have a long history in British cooking, especially during hard times, the cakes often had names like End of the Month cake or Thursday cake. They were very popular during wartime rationing of course.

Have a look on Pintrest for chocolate wacky/crazy/depression (depending on the person posting there are a few names) - no egg or dairy and they are really nice

I read somewhere you can use mayonnaise as an egg substitute in chocolate cake.
Once I forgot to put egg in a cake and it was so good we made it again like that (it was like a sort of shortbread) .... but prob not the look you wanted or v good for decorating.

Crazy cake always goes down well.

bananas
yogurt

I think my mum has used golden syrup before too.

You can use Betty Crocker cake mix and 1 can of pop (I use 330ml of sparkling water instead) it tastes better than made the normal way

Yes, mayonnaise can make a cracking chocolate cake. Google the recipe. I have a jar of mayonnaise left over for christmas which I'm keeping to make a cake when the depression of lock down well and truly sets in

Go on veggie desserts website. There's a vegan chocolate cake recipe which is lovely. You can use normal marg instead of dairy free and normal milk etc.

I’ve made the eggless Mary Berry American Choc Cake successfully many times in the past. It always needs slightly shorter baking time than she suggests.
I’ll attempt a picture...
