Recipes we can double up on a Sunday for Monday lunchtime

Hellooo, I’m looking for inspiration please.

On Sundays, dh and I double up on what we make for tea so we can take a portion to work on Monday for lunch, just to make things easy.

Up to now, it’s been a choice of chilli/cottage pie/ meatballs/ chicken or beef casserole. And we’re getting bored.

What else can we make on a Sunday that we can take to work on Monday?

Frittata
Lasagne
Stroganoff
Cannelloni
Pasta bake
Fish pie or fish cakes
Curry (eg Thai green)
Moussaka
Sausage bake

Chicken, lamb or chickpea tagine always keeps well and I find the flavours are even better on the second day.
Eat with couscous, flatbread or jacket potato.

I tend to do pasta on a Sunday (or I did when life was normal) so it could be taken for lunch the next day.
