Help - peppercorn sauce.

Son has decided he would love peppercorn sauce with his steak tonight........during blooming lockdown......
I have butter, flour, cream, onion, a black pepper grinder (not sure I can get the lid off to get at the little buggers inside) - never made it before. What do I do? Come on wise virtual chums.....

Or, I'd improvise; cream, mustard, coarsely ground buggers perhaps ?

You’ll need to make a roux with the butter and flour, gradually add the milk and add the crushed peppercorns. I think that’s how you make it?

Usually made with green peppercorns IIRC.

I use crushed 2-3tsp peppercorns, 80mls brandy or red wine 100mls beef stock and 125ml double cream. Heat a frying pan, add oil and the peppercorns keeping them moving, add the alcohol bring to the boil, (I set fire to it if using brandy) when it boils (or the flame goes out), add the beef stock and reduce by half then add cream and stir until it thickens.

Chopped shallot and onion, add crushed black pepper or peppercorns, add brandy, set fire. When flame goes out add beef stock, reduce, Dijon mustard, cream, enjoy

My mum used to do a cheat version ..... milk, beef gravy granules and add pepper to taste.... not the most sophisticated but quick and easy.

Thanks everyone. I used garlic, butter, onion, beef stock, cream, black pepper and reduced it. It was really good and would definitely do it again!
