Am I risking it with this mascarpone?

Two days ago my daughters made a banoffee pie by themselves. I didn't realise they used some of the mascarpone I had bought to make no bake cheesecake.

Today I went to make the cheesecake. I used the remaining half of the mascarpone they had opened two days ago, plus another unopened tub and some double cream (unopened).

After making it I checked the tubs and I'm now panicking. The tub they opened said use within two days of opening - ie today. The other tub said use within one day of opening (different shops).

The cheesecake is setting overnight in the fridge - will it be ok to eat over the next 2 days? I didn't realise mascarpone had to be used so fast. The opened tub had a small amount of water but smelt fine and was still very white.

Please stop me panicking!

Absolutely fine. We routinely use ours up to a week or two after it’s been opened. Foods don’t have inbuilt clocks telling them exactly when to go off - it’s just a very broad guideline.

Phew! I'm normally reasonably relaxed about these things but had a minor panic!
