I have these - courgette, beetroot and turnip from colleague’s garden. I have a red onion and garlic in the cupboard. Not an awful lot else. 5 of us. Any suggestions?

Veggie fritters. I just grate any veg I have to hand and squeeze out any excess liquid. You can add a little flour and/or egg to bind, but it's not necessary. Fry flattened spoonfuls in batches until golden on both sides or shape into thin 'burgers' and bake or grill in oven at 180°

Thanks for your ideas. I’m going to do the gratin but will definitely save the fritters recipe for another time. It’s all a bit Ready, Steady, Cook right now.

Another veggie bake idea. Adapt to whatever veg you have, if you're not veggie, could add bacon or ham if you have some
