Sourdough starter

I have bread flour but I’m running out of yeast... I was thinking of trying to make sourdough bread. Does anyone have a good method for making a sourdough starter? I had a search for recipes but some of them looked v complicated!

I think you can just keep a little dough from your current baking aside, cover it in water and pop it into the fridge. Bread dough does freeze well so that might work for you, too.

It may require a little time and a little sugar to bring it back to life. I will check my Elizabeth David later and see what she has to say.
