I've just got a delivery I'm really struggling to get my usual favourite ingredients. I suspect there's quite a few of us in similar positions.

So I ordered some things I have used for AGES problem is...I've forgotten how to use them!

My "rediscoveries" today are shallots and courgettes.

I'm trying to use up fresh food first

A so it's not wasted

B so I'm saving longer shelf life things just in case.

C in the probably vain hope it will boost my immunity.

So...

I vaguely remember I used to use these for pasta dishes but I'm buggered if I know what or how!

I also have in the way of fresh:

peppers, mushrooms, a little pasta, cous cous, maybe dried noodles, eggs, bread, quorn bacon, quorn chicken pieces

I found this recipe

But I don't have Greek yogurt or dill (which I don't like anyway)

Could I replace the spring onions with shallots?

What can I replace the yogurt with? I've only fruit yogurts in don't think that will work Grin

Would milk work?

I also don't have a muffin tray but I have a bun tray will that work?

I THINK I've cake cases somewhere to put in the bun tray, if not could I just grease with veg oil?

Definitely use shallots rather than spring onions. Do you have lemon? I'd be tempted to make buttermilk by adding some to milk in place of the Greek yoghurt. Bun tray would be fine.

If you have excess courgettes, I always use them in muffins / chocolate cake although that might defeat some of the point...

Ooh interesting. I have jif lemon juice leftover from pancake day would that work?

I had stir fry tonight and added some shallots and left out my usual quorn pieces as they've a longer date so can be used another time

Courgettes are lovely made into ratatouille with tomato, aubergines, peppers and red onions (shallots would work too) and you could have that with either pasta or couscous and/or add some of your quorn pieces or break some eggs in to give a shakshuka type dish

shallots are great for stews or roasted but you can use them pretty much like onions or leeks in any recipe

Ooh ratatouille a good call. Dd doesn't like aubergine either so I'll try and get some and make that. Thanks
