Thick, bone in pork chops - recipes?

I usually do my mum's recipe with onions and sage gravy : does anyone have an alternative to this?

Slice them down to the bone
Stuff each with blue cheese, sauteed onions,mushrooms, rosemary

In a dish, with a tin of chopped tomatoes, sliced olives and/or gherkins and/or capers. 30-40 mins in a preheated oven. Delicious.

I use a shallow pyrex dish and put onions and apples in the bottom then the chops with a bit of gravy and cider/apple juice then sprinkle a bit of Paxo on top (last 20 minutes)

Brown in a pan, then finish in the oven on top of a bed of rhubarb.

Or brown in a pan, then simmer in a sauce made from onions, fresh chopped or tinned tomatoes and some sage leaves.
