Am looking for a great pasta bake. Must be quick to prepare and not contain fish. Any suggestions please?

Cook pasta, then in a pan fry chopped mushrooms, onions, garlic and chicken. Combine with cooked pasta and a tin of condensed mushroom soup (without water added) put in oven dish and top with cheese. In oven until cheese is crispy. Cheap and tasty!

I add in whatever you like on a pizza. For me it's tomato sauce, extra water if you haven't precooked the pasta, nduja sausage or spicy pepperoni, onions, sweetcorn, black olives, chopped peppers. Top with grated cheese or just some parmesan.

I like this www.bbcgoodfood.com/recipes/baked-conchiglioni-sausage-sage-butternut-squash but the method is a massive faff (like so many BBC Good Food recipes IMHO). I basically make a regular cheese sauce instead and add sausages, squash and sage. No truffle oil either - as nobody around here is going to appreciate that!

Do you like mushrooms? Goats cheese? Spinach?
Chop up mushrooms, or whizz them up in a food blender if you can with some garlic.
You can use fresh or a bag of mixed frozen ones.
Fry the mushrooms in some butter.
Butter your dish.
Mix pre-cooked pasta with the fried mushrooms, some cream, some frozen spinach and some chunks of goats cheese, some thyme or rosemary, some smoked paprika if you have some.
Pour pasta mix into dish.
Top with breadcrumbs if you have some.
Bake.

I'll share my pasta recipe with you if you share your pasta with me... ;)

I wanted to make pasta bake this week, but cannot buy a single bag of pasta anywhere!!

Rukmini Iyer has two pasta bake recipes (I think both in The Roasting Tin) that I like.

One is fusilli with goat's cheese, roasted peppers, mushrooms and pesto.

The other is gnocchi with butternut squash, mushrooms and some kind of green dressing made with basil. It's amazing. It's crispy gnocchi rather than soggy gnocchi.

Now I've typed that I'm not convinced gnocchi is pasta at all, but it's very similar.

DaftCat · 11/03/2020 12:36

I’m clearly extremely common becaus I actually like the Homepride tomato & basil one in a jar. With about 4 times the recommended amount of cheese on top.

namechangenumber2 · 11/03/2020 12:42

Ooh Hebe that goats cheese one sounds lovely!

PrivateSpidey · 11/03/2020 12:47

This is also really nice. Its not a bake with cheese on top though, it's more of a pasta casserole (?) So it might not be what you're looking for OP. But it tastes nice.

DaftCat recipes are always so stingy with their cheese aren't they!

DaftCat · 11/03/2020 12:52

@PrivateSpidey oh absolutely. DH always diligently weighs out the ‘correct’ amount. I just grate up handfuls of the stuff and throw it on.

PrivateSpidey · 11/03/2020 13:02

Grin I definitely think your way is the best! Weighing cheese indeed!

lumpy76 · 11/03/2020 13:24

@HebeMumsnet - please tell me your name is actually Hebe...I have a 10yr old Hebe ☺️
Sorry for the lack of pasta bake recipes!

HebeMumsnet · 11/03/2020 13:35

namechangenumber2 It is SO good. I'm always recommending her cookbooks. I use them several times a week and never yet had a duff one.

lumpy76 High fives to your Hebe! We are a rare breed!

Alicatz66 · 11/03/2020 22:21
