Mince curry

I have some nice steak mince defrosting, wanted a recipe or tips for best mince curry?

Is it just a case of frying onion and spices, browning mince and adding tin toms and stock? What spice combo works best - I don't have blends (curry powder and garamasala) but I have a well stocked spice rack. - cumin, chili, garlic, paprika, turmeric etc

Ingredients
500g mince beef or lamb 2tbs tomato puree
2tbs of garlic paste. Green finger chillis
1tbs of ginger paste. 3 tomatoes
Cumin. Fresh Coriander
Ground coriander. 2 onions
Paprika. Peas
Chilli powder
Garam masala
Turmeric.

Very finely chop the onion and cook on a low heat with a bit of salt until soft. Add garlic and ginger paste, chopped chillis, and chopped coriander stalks. Remove from pan and brown and drain your mince. Add back the onions. Add all your spices and cook on a medium-high heat for a few minutes before adding tomato puree and gradually add water to make a sauce. Add your tomatoes (i cut into quarters) and bring to the boil and add your peas and simmer for 20 minutes. Stir thorough a bit more garam masala Season to your taste, i always add garlic powder, salt and pepper and chilli flakes. Add coriander 😊

Thanks all - just checked back in. Mince curry was lovely - fried off onion, fresh ginger and garlic - added a madras spice pot I found in back of cupboard so I didn't need to worry about what spices to use! , browned off the steak mince, then just water and tin toms and tom purée. Salt and pepper. Boiled some new potatoes and added those at end. Had it with rice and made some chapatis - so good!

I always add peas as well
