Left over roast lamb

I’m cooking a lamb shoulder this weekend and always have leftover meat as there’s just 2 of us here.
I’m struggling to find any recipes that use up the leftovers and have previously had to throw some away as it didn’t get used in time.
Any ideas that use it up- preferably quick meals if possible please.

Yes you can make the curry sauce first and then put the lamb in to warm through at the end.

Stovies?

Was just going to suggest stovies. Potato, carrot, onion, chop up the lamb, brown off the onion in some oil, put the rest in, mix it all up, lid on the pot, and leave for an hour or so. Utterly scrumptious.

Lamb Rogan Josh is a favourite in our house too.

I shred it up and add to fried peppers and onions for fajitas - add hummus to the wraps and sprinkle feta on top

Wraps with spinach and a yogurt mint sauce mmmm

Or do some roasted med veg, served with couscous and fried lamb.

Ohh this is what I always do! Lots of rosemary, spices and a splash of red wine.

So glad I posted- got some great suggestions here. Thanks- might try a curry this time but those salads and wrap ideas sound amazing too. Never tried stovies so that will be something new for us.

I can recommend Leftovers by Hugh Fernley Whatshisname. It's great for working out what to do with things that are lurking in the fridge in a Monday morning.
