Got a swede in this week's veg box, looking for inspiration on what to do with it, any ideas?

Was just going to add to a stew and mash it (both of which I love) but wondered if anyone had any other good recipes.

Google "Singing Swede"
You microwave it whole and then scoop out the middle. No peeling or chopping

Mashed with carrot and baked in the oven to get the top crispy, I add chives too!

When we get swede in our veg box (which is frequently at the moment) we either make swede gnocchi or aubergine, lentil and walnut ragu with swede puree. Both on the BBC goodfood website but both a little faffy.

Alternatively, I let it get really shrivelled on the veg rack and then put it in the bin.

Cut into 1.5 cm dice, boil until just cooked, then fry in hot butter until starting to caramelise

Cut it into chips, add a little oil and season and bake in the oven for approx 15 mins, makes very acceptable alternative to potato chips

Agree with singing swede! Plenty of salt, pepper and butter... mmmm! Could also do cardomom and swede soup; gordonrumsay.com/vegetarian-swede-and-cardamon-soup-for-christmas

Swede Bhaji! Grated raw and fried in a bhaji batter, it's delicious.
Also there's a swede cake recipe I have lost that was like carrot cake and was yummy. I wish I could find it again!

Make swede oven chips with chilli dip.
It’s best simply mashed with butter and lashings of black pepper though.

I've recently been adding it to carrot and coriander soup. It works beautifully, thickens it and blends in.
Fry onions in butter with a tsp of coriander, and chopped carrots and swede and cook until tender in vege stock, then blend with some fresh coriander and cream and salt and pepper. Divine and the kids love it.

Cube, boil in white wine, stock & butter until it's reduced. Mash with creme fraiche.

I make shepherd's pie with lamb mince and lots of chopped onion, carrot and swede. Delicious.
