Best veggie lasagne?

I want to make a vegetarian lasagne for a dinner party coming up, and I'm looking for ideas. Does anyone have any recommended recipes? I was thinking perhaps of pumpkin or mushroom, but any ideas welcome. Thanks!

Mine is bloody lovely, if I may say so myself.

I roast chunks of red onion, red pepper and mushrooms.

Meanwhile, I fry finely chipped onions, red & green peppers, carrots (celery if I've got some) and garlic. Add herbs (parsley, thyme, oregano usually) & balsamic vinegar & a big glass of red wine. Add passata & being to boil then put the lid on & stick it in the oven to cook long and slow (about an hour).

Mix the roasted vege into the tomato mix and add Merchant Gourmet lentils (The tomatoey ones work really well, but puy nice too). Add a dollop of red pesto if got any

Proceed as usual with lasagne sheets and cheese sauce then a big later if grated parmesan on top.

(Not relevant but I find the comments absolutely hilarious the number of changes and substitutions people make. My favourite is the one who substitutes 450g of sautéed sausage meat for the hazelnuts as they need meat at every meal. That's a completely different recipe!!)

Amazing, thanks all! I was looking at that Guardian one and wondering whether to make that.

I've also found a butternut squash and spinach one on Good Food that looks interesting.

That's hilarious about the substitutions!

What I found interesting is that a lot of the recipes use ricotta or similar rather than bechamel, as you'd use in a meat lasagne. Is that because it's too heavy?

Agree with pp that the ones with just white sauce (no tomato) are nicer. Somehow the veg stands out more. I've done one similar to the butternut squash & hazelnut one above but filling is...onion,sage, garlic, mushroom, squash cubes, pine nuts, tender stem broccoli & mozzarella. Loads of Béchamel sauce with double cream in, and cheese (& maybe breadcrumbs) when uncovered for last 10 mins.

Actually it's the spinach and ricotta lasagne, not cannelloni, but Delia's got a cannelloni with pancakes instead, which sounds good.

It's got a little kick, but you can adjust the chilli to not make it as spicy.
