My dh is a fabbola chef and he always cooks when we entertain, he now has to work [boo hiss] we can't cancel so I have to cook.

Help.

Want something easy I can hopefully chuck in oven and leave. So far have thought of jacket pots, sald and rosat chicken but not very exciting.

I thank you.

Lamb. Tesco do a fairly small lamb in honey thing, you'd need a couple. Comes in its own tin, you just peel back the film, pop in the oven and then carve into thick slices.

Serve with chunky roast veg - quartered onions, peppers, potatoes, cherry toms, chuck in oven for, say last 40 mins of the lamb time.

No, roast chicken is GOOD. What about potato gratin to go with (slice peeled potatoes fairly thin, pour over cream with crushed garlic in, dot with butter and bake. Two or three cloves and plenty of salt .
Roasted veg?

Some sort of slow cooking beef dish? Delia has some good ones IIRC. You could always do a lasagne and salad. Always easy to do in advance and goes down well with lots of wine and good company. This looked good when I saw it on tv the other week Rick Stein

One thing that's easy and impressive that my DP always cooks in foil parcels. You can do it with chicken but he normally does it with fish and you just have to choose your flavours and vegetables. For e.g. he does a Thai one with white fish, baby sweet corn and sugar snaps, with lemon grass, lime juice, cocanut milk, coriander and chilli. Everyone gets their own parcel to open at the table and the smells are delicious. You can also do it with wine and, again for e.g. with cream, wild mushrooms and thyme. Nice to have some salad and potatoe or rice on the side. Also doesn't take very long and can be prepared in advance and just put into oven when your guests arrive.

Roast chicken is great to do, with lots of roast veggies cooked under the chicken too.

Get a bowl and some in half a block of butter, some chopped parma ham or smocked bacon even and some lemon zest, and some herbs to perhaps. Scrunch up and smear over top ot the checken, and under the skin. Put the lemons and a bit of butter inside chicken too. Cook until about 45 minutes left, and then put a selection of roasting veg under it. Finish off.

Serve with some steamed veg, and chicken gravy.

lasagne - one meat and one veggie, serve with salad and nice bread. can prepare earlier too.

Roast chicken also good as said by others and really nice with salad as well as with veggies. If I'm not doing a big roast thing I normally do a warm potato salad with mine (potatoes, spring onions and chives with a lemon and wholegrain mustard vinaigrette dressing) and balsamic roasted peppers.

japanese baked samon for dummies
-put salmon chunkks in ovenproof dish
-pour bottle of terryaki sauce (sweet soy from tesco or else)

  • sprinkle chopped spring onion (1bunch) and 2 yellow peppers -shove in oven 30 mn (200) and leave to stand in oven (off) 15mn

tada!

serve with brocoli and white rice.

Want to make the rice super tasty?
fry 2 onions in olive oil (just let them go translucent, not brown). add salt and pepper and chopped coriander (a whole bunch). fold into warmed rice (boil/drain/wash rice in cold water-store in fridge and reheat in microwave at last minute with onion mix)

Greek roast chicken - seewww.guardian.co.uk/weekend/story/0,,2132983,00.html
(you'll have to scroll down a few screens to get to it). I don't use as much olive oil. Our kids love it too. Would be nice with a green salad, or roast some other veg at the same time but in another tray.
