Best recipe for thin, crispy round the edges pancakes??

My usual one has 3 eggs in it and I feel it's a bit excessive!

Anyone got a good recipe? We like them very thin and we cook them with butter on high and the edges get that lovely crunch to them. But it doesn't seem to work with all recipes.

cup of eggs (4 or 5 depending on size)
cup of flour
cup of milk

leave for 20 min
more milk if not liquid enough, should be like pouring cream.

I just use the classic 123
100g plain flour
2 eggs
300ml milk
a pinch of salt

Makes 6 pancakes in a large frying pan (or 4 if DH does it because he makes them too thick)

Gizzie Erskine’s recipe is the one. Just stick all in a bowl, mix until smooth and REST THEM. Minimum 30 mins, an hour or two if you can. Double/triple the recipe as needed.
