Christmas Cake..........It's that time.............Who is signing up this year...............

You have a month or so to buy ingredients but this is a copy of what I wrote last year. Please use this thread to tell us of fantastic recipes and to add the general lovliness of anticipation

6oz sultanas
6oz raisins
4oz currants
4oz glacecherries
3oz mixed peel
1/4 pint sherry
6oz butter
6oz soft brown sugar
4 eggs
4oz SR flour
4oz plain flour
pinch salt
1/2 teaspoon mixed spice
1oz ground almonds

Mix together all fruit. pour sherry over and leave to soak for 1 week, covered. Stir frequently until required.

Grease & line a 7 - 8 inch cake tin

Method

Cream butter & sugar until soft & fluffy. Beat in eggs one at a time. Fold in flour, salt & ground almonds. Drain off any liquid from the fruit and mix fruit into mixture stirring until well blended. Put into prepared tin, smooth top and bake just below middle of oven for 1 hour on gas mark 3. Then cover with foil and reduce oven to gas mark 2 and cook for a further 1.5 hours until firm to touch. Leave to stand in tin until nearly cold. remove from tin, prick well and pour over liquid from dried fruit. Wrap in foil or greaseproof paper and leave to mature until a few days before christmas, then marzipan & ice.

Tips: I don't like almonds so didn't use em. I also put some chocolate liqueur in with the sherry. also I don't like marzipan so didn't ice, but did make one for a relative which I did ice and it was easy. I have never made a christmas cake before and I have to say this recipe works like a dream.

I'll join you I think..........(I've never dared venture in the realms of Christmas Cake making before - fairy cakes the most complicated I've ever got)- but marizpan on a Christmas cake......it must be a southern recipe

And - I have a memory like a sieve.....I forgot to post it today - well I didn't forget I had it in my wallet - and realised when I got to the post office to buy an envelope that I'd left the address at home.

Make mine in October, never ice it though but glace fruits on it and glaze it (Dh loathes marzipan. So I shall join you if that's ok.

Don't forget stir up sunday (last sun of Nov) for christmas puds.
MNWI reforming this w/e Chippy. Will have a few seasonal bake offs and then back at the end of NOv for Christmas ware and crafts. All v exciting.

The whole idea of making it now is to allow the sherry/port/whiskey/rum/vodka/brandy to mature within the cake so it's very very rich.

But if you prefer to make without booze, you can replace with pure orange juice.

Ooh, I'm in! Never made christmas cake of my own!
The only problem with putting marzipan on a cake is I need to buy twice as much so I can scarf it straight from the pack!

I am 5 weeks off as well so shall try and get it done this week so I can forget about it until christmas!

QOQ, Stir up sunday is traditionally the last sunday of novemeber when you 'stir up' the ingredients of your plum pudding. All the members of the family are meant to give the mixture a stir for luck. You let it sit until christmas (Obviously it is filled with shed loads of booze).

And it is very nice.

And you are smuggity smug on Christmas Day eating your own Christmas pud and not something you bought form Marks 2 weeks before

aha - I guess I'll have a busy weekend that weekend - DH's birthday on the 24th, "Stir up Sunday" on the 25th, then DS2's 4th birthday on the 27th!

I find "sampling" the spirits before you add them to the fruit (and you have a choice of course DH prefers whisky to brandy) helps the whole process move along very smoothly

I've never done one before - I only made my first successful vic sandwich yesterday - so I shall be sapping all knowledge from you lot.

I thought it was only me who was thinking about starting making my christmas cake(s). As i end up making 4 or 5 cakes and i don't even like christmas cake.

Chippy, oh yar boo to your DH. The finished product is much nicer if you have spent half the morning , ahem, sampling the suitability of the product. value brandy bleurk.
