Yummy quick salads please to get me beyond just opening a bag of leaves

Salad accompaniments that is, not main dishes - and not potato/pasta salads either please - just inspired things I can throw together to go with dinner, or maybe rustle up for a healthy lunch for me?

I personally think that the reason salads don't fill me up is because they are so bland....I add: radishes, pepperss, chillis, red onions, cherry tomatoes, cucumber...a variety of textures and a bit of spice makes them easier to eat IMO
Slice tomatoes, season them in salt and mixed herbs (Portugest favourite) and leave sit fot 15 mins before eating

My favourite salad:-

Chop the following into small pieces:

Lettuce (Little gem nice)
Cucumber
Toms
Onion
Avocado

Add a tin of tuna, a tsp of dried mixed herbs, and a squeeze of lemon juice.

Served with warm bread, it's a delicious lunch.

Chickpeas, tuna, red onion, yellow pepper chopped up small, coriander, lemon juice and olive oil. I go quite heavy on the lemon juice.

no need for always raw, i love cooked veg cold/warm. leeks with oil and vinegar, steamed green beans with fried onions, grilled peppers, courgettes fried with garlic.

russian/olivier salad: cooked peas carrots potatoes beetroot (diced all to same size) mixed with bit of raw onion and some pickled cucumber, dressed with half yog half mayo. yummity yum, v good with roast topside beef.

I like grated carrot, avocado, and olives in mine (not always altogether)

Dressing is important.

Try a few different things out.

It's easy to make your own. Put everything tgetehr in an old jamjar and shake before pouring over.

I like a little bit of horseradish in my dressing - good as an alternative to mustard.

feta and proper yummy tomatoes go with crunchy leaves and, if you have time, some onions and peppers slow-fried with balsamic and a bit of brown sugar.

blimey what would you have with that lapin? i mean it sounds veyr nice but side salad???

i also like tomato avocado cucumber and lemon juice with toasted pitta bread.

Sliced tomato and red onion with diced feta cheese and black olives. Pour over balsamic vinegar and olive oil... Yummy!

At the moment I am mostly eating pitta filled with grilled halloumi, handful of fresh coriander and mint, with whatever's handy - best choice cherry tomatoes, diced pepper, raw mushrooms, cucumber etc... with a wee bit of oliver oil - all less than 2 minutes and YUMMY!

A really delicious healthy accompaniment to salad type stuff is mashed roasted carrot with a small packet of caraway seeds rouchly ground sprinkled with feta and a dash of oliver oil to loosen.

Also, don't underestimate the beetroot! Boil for about 45minutes or until a knife goes easily through (the skin will pop off easily when boiled). Chop it up and add fresh mint and feta - warm or cold.

For tomatoes, lightly crush 10 cloves of garlic and pour over 3 tblsps red wine vinegar and some salt. Leave 10 mins and strain. Pour over sliced tomatoes and drizzle some olive oil and fresh basil. Have crusty bread to finish the juice.

smoked mackerel, orange & watercress salad with sunflower seeds
not really side salad but love it just now

mixed bean salad w/ onions, peppers etc

simple tomato & basil salad, add more if you wish

stray bits of fruit can be nice added to things, walnuts, blue cheese esp roquefort

dressings are important i think to

i think alot of ready made salad leaf bags can be washed in chlorine so i dont get them

Little lapin wants to griddle me

we like avocado, french beans etc- the boys really like grapes or whatever bits of fruit are in season added to a basic garden salad, juicy fruit 'dresses' a sald for kids who often don't like proper, adult dressings.

Keep an eye out for whatever's seasonal and on offer- exotics (wasabi in dressings), top quality new season apples- whatever looks good
