Why do my cakes always come out flat?

It's DD1's 2nd birthday tomorrow and I want to make her a really nice cake for her party next saturday, but every time I make a cake it comes out flat. What am I doing wrong?

I did, but I didn't weigh them like you're supposed to. DD has been flying this afternoon after all the colourings!

Weigh them????? What is this weigh? I don't possess any scales and haven't for a few years now.....

I thoroughly enjoy the weigh the eggs method. Makes me feel sciency. I bought some nice new digital scales from Argos that do the job perfectly.

Poncey types will use the scales with 2 bowls at either end (you know the big cast iron ones with mock antiquey copper bowls)....doesn't make the cake taste any different though imho
