Plum jam

I have just tried to make my first ever jam, we moved to a new house with loads of plum trees, followed the recipe and ............ disaster, just before the jam got to 104 degrees it burnt

Where did I go wrong?

I am about to make blackberry jelly, will that end in tears as well?

Or can some kind soul please point out the error of my ways

Frozen plums are OK. Not sure about the pectin content chaniging - but if you are worried, squeeze in some lemon juice.

Bastard plum chutney will not set. Have been boiling it, let's see, 10 hours now (not exaggerating) and it has gone a rich dark mahogany brown but is still runny as a very runny thing.

Went into the kitchen to find dh had tired of waiting for the stuff to thicken and was boiling it into black tar. I have jarred it up and will report back in 3 months as to how it is. I may have invented sliceable plum Branston pickle.
