Ratatouille - your best t+t recipe please

I've somehow managed to accumulate lots of peppers, courgettes and onions and just really fancy some delicious ratatouille to use them up - along with other veg of course.
I know ratatouille isn't traditionally a winter dish but I fancy something fresh and different from all the stews and more stodgy type dishes I've been having lately.

So what recipe do you recommend?

I've looked online - but am none the wiser - roasted, boiled, fried or what, and which herbs are best?

Hope someone can help me out - thanks in anticipation.

I use the River Cottage Veg oven roasted recipe with the option of the stove top tomato source.
