Vegetarian and gluten-free buffet

I am looking for dishes I can make for a vegetarian, gluten-free buffet lunch. Got lots of salads, so that's not really an issue - I just need substitutes for where I would usually do a cold meat selection or tarts/quiches (have not managed to find a good gluten-free pastry). Anyone got any ideas?

Cheeses and gluten free oatcakes (clearly labelled as some gf people can't have oats...)
Stuffed eggs! Retro and yummy.

Cheese
Savoury flapjacks made with GF oats. My favourite recipes are the Riverford carrot flapjacks, these cheese and onion ones www.sainsburysmagazine.co.uk/recipes/baking/cheese-and-onion-flapjacks and these leek ones

If you’re happy to buy quiche I can recommend the M and S gluten free cheese and onion quiche.

These are fab suggestions - thank you! Forgive my ignorance, but what are stuffed eggs and twice cooked potatoes? Do you have a recipe for them, pls?

Potatoes.... tbh, I’ve not used a recipe... I just mash stuff with sour cream, or cream cheese and spring onions, season and stick cheese on and it works, so I don’t think you need to be really precise, lol

Here's a recipe for the eggs-

But you barely need one, it's just hard boiled eggs cut in half with the yolk popped out and mashed with mayo and whatever you fancy and then put back. Very very easy but very very yummy and more-ish.

DustyDoorframes · 22/01/2020 22:00

Haha @tabulahrasa clearly the potatoes and the eggs are the same principle- cook, scoop, mash with yummy stuff, put back...

IJustWantToWearDungarees · 23/01/2020 08:49

Ah brill thank you both! I know the eggs as devilled eggs and would agree that they are yummy - totally didn't think of them but will now add them to the list! The potatoes sound like a great idea - so you put them back in their skins, I'm guessing? Can you prep them beforehand and then just heat in the oven?

Thanks so much for all these ideas. V useful.
