Fussy toddler v vegetables

Please can you help with ideas for my suddenly vegetable phobic darling niece !! Her poor mum my sil is being pushed to the limit trying to get veg into the little minx. Ideas for hiding said vegetables would be gratefully received . My children are in their 20s and I just can’t remember what I feed them lol

Mix and blend with tomatoes and stick over pasta or chicken.
Make fritters, or cauliflower cheese.
Failing hiding stick cheese on top and melt.

Mine like hidden sauce for pasta. Also a Korma curry made with blitzed butternut squash.

Grate veg like carrots and courgettes into sauces.

I have one rule that all the elements of a meal must be tried. If they don't like it they can leave it but they need to at least try it. I've seen research that suggests after about 12 tries, most people will accept a food, and this tends to ring true with my kids.

Give a multivitamin. I still do this with DD 12, as she only eats one proper meal a day.

We don't do hiding veg but DS doesn't have THAT many he likes (he has a poor appetite for medical reasons).
We get a lot of veg in chopped up fine in pasta pesto, in mac and cheese, raw (peppers, broccoli), with raisins (mainly grated carrot).

I just pop it on the plate as normal, if he eats it bonus if not it’s not the end of the world and will just keep offering it. It’s a standard thing toddlers do and isn’t worth the worry.

Mash! Carrot, turnip, sweet potato, celeriac... mushed you with potato. Soup. Raw, grilled, griddled, stir fry, kebab, gratine...

Loads of ways to try them. My sister only likes raw or slightly steamed veg and I would eat any veg covered in cheese and/or with pastry.

And if they don’t like say a raw carrot - try to negotiate!

Say ‘ok maybe try it in a soup or steamed?’ That how we got around ‘sweetpotatogate’ in our house when I stupidly didn’t ‘pick my battle’ well (I was sleep deprived) and made the mistake of saying ‘your have to eat that sweet potato’ to a very stubborn DS. We negotiated soup the next day (I cheated and made carrot with a bit of sweet potato to ensure he would eat it as he loves carrot soup).

It’s probably just a phase.

Cauliflower pizza base:
Heat the oven to 200C, gas 6. Blitz 250g cauliflower in a food processor and tip into a microwave-safe bowl. Cook on high for 5-6 mins, until softened. Carefully squeeze out any excess water in a clean tea towel, then mix with 1 beaten egg, ½tsp freshly chopped oregano and 1 tbsp Parmesan, and season. Spread the cauliflower mix onto a lined baking tray, to a circle about 23cm wide. Spray with Frylight and cook for 10 mins.
Mix tomato purée with a little hot water and spread onto the cauliflower base. Top with mozzarella and cook for a further 10 mins.
