Baked too many sweet potatoes, what shall I do with them?

Baked in their skins, quite mushy inside - normally just reheat them but they're not great - anything nice I can do with them?

mash them up with goats cheese, bit of garlic, coriander, lemon juice, pepper, yum!

mash them with some butter & rock salt?

mix with mashed carrots ?

mix with white potato and tuna for fish cakes?

eat as they are with chicken?

make into sp salad. leave to cool, peel and cut into chunks. mix with chopped celery, pepper and spring onion (or whatever else you have to hand). make dressing, i use half plain yog half mayo.

mash them and freeze them in batches so that you can add them to recipes later

Oh I always eat them! Just wondered if there was anything better I could do than just reheating them

Make really nice soup which you can freeze. Fry onions in olive oil, add SPs, plus any other suitable veg you fancy (carrots, parsnips, leeks, normal potatoes etc, and an apple is good), fry for a few mins, add boiling water to cover, add stock powder, salt & pepper, simmer till all soft, blend.

Make pancakes! I do with leftover - mash and add to pancake mix and it ALWAYS gets gobbled up by ds1 and ds2 before it even cools.

Another vote for soup, one of our favourites, has a lovely texture when you use sp instead of normal ones.
