Pizza dough storage

I have too much homemade pizza dough. It's in a bowl and covered with cling film but can it be left out on the work surface?

For how long?? When I used to make it, I would make double then bung half in a freezer bag and seal tightly and freeze. Once defrosted, treat as normal. Used nigella's pizza casareccia (sp) recipe and always worked fine.

I freeze dough all the time.

If you are keeping it for tomorrow I would put it in a tupperware pot in the fridge, otherwise I'd freeze it.

I left it out overnight and it's risen again! It's cold in my kitchen so I'm surprised. I've put it in the fridge now.
