I’m poised to make it. I have the kefir grains, a glass jar, 65g of sugar, half a lemon and some mint leaves ready to add to the water. I’m just leaving the water to stand for an hour or so hoping that some of the chlorine might evaporate. I’m wondering how exactly I’ll know it is working 24/ 36 hours later? Also worried that the grains won’t work as they’ve been sitting in their sealed packet in my kitchen for a week. Has anyone got any advice?
