I use a Jamie Oliver recipe and it has streaky bacon (or pancetta) fried with fresh rosemary and also red wine in, tis good but you need nice fresh parmesan, doesn't smell like sick at all.

oh yes, pancetta is nice too. (Kids' babysitter is vegan, so I try to keep meat/dairy out of my basics) And it's good to not grate the parmesan until you are planning to use it...stays fresher that way. I buy mine in italy and keep it in my freezer.

Base I described above is foundation for a whole lot of dishes...I use it for my stews too.
