Use by date on chicken?

I bought chicken actually delivered by ASDA on Friday with a use by date of 5th jan. planning to make a curry tomorrow to last for Mondays dinner also- if I cook the chicken tomorrow can it be eaten on Monday when already cooked and just heated up again?

Or would it be best to freeze it overnight then defrost Monday morning?

Once it has been cooked it resets the use by. I would then use it within two days.

As long as you cook it on/before the use by date it will be totally fine to be reheated on Monday.
