Vegetarian family crowd pleasers

All last year we did Meat Free Monday and it was (mostly) a big success. We're going to try to increase our veggie meals further this year too - veggie not vegan though. Not a massive fan of quorn products, although everyone loves the Linda McCartney mozzarella burgers from the supermarket. We've also enjoyed anything with halloumi, but have fallen into the trap of the same meals on rotation - halloumi and couscous, pasta and garlic bread, cheese and tomato pizza.

So can you inspire me with quick and crowd pleasing family meals? Preferably not with fake meat or tofu...

Vegetarian tagine with cous cous and flatbreads.
Ratatouille
Vegetarian Shepard's pie
Mushroom and halloumi burgers
Homemade pizzas/calzones
Veggie sausages with mash and onion gravy.
Currys - dhals etc.
Roast cauliflower
Enchiladas/fajitas etc
Greek style orzo
Spring veg risotto
Aubergine parmigiana

My carnivorous husband thinks it's better than chilli containing meat

Cheese and onion pie/pasties.
3 bean chilli with rice/in tacos/enchiladas
pasta arrabiata
pasta pomodoro
green lentil Bolognese.
roast veg lasagne
huevos rancheros with crusty bread. I also do this with cheese instead of eggs and its delicious.
mushroom stroganoff with noodles
halloumi and veg kebabs
nut roast.
toad in the hole with roasted carrot and beets instead of sausages.

Fry some onion. Add a spoon of korma paste (add more at the end if required but it can be a little spicy for children if you bung too much in). Add 2 tins of beans (choose from chickpeas/butter beans/canellini beans etc). Add some finely chopped carrot and any tomatoes you need to use up.

Add a tin of tomatoes and a tin of coconut milk. (Or more than a tin of each if you fancy - not an exact science)

Cook gently for 30 mins. Serve with rice.
Left overs can be frozen

My 3 primary aged children gobble this up.

Anything involving spinach and ricotta - spanakopita, lasagne (topped with tomato instead of bechamel) puff pastry pinwheels.

Chickpea and butternut squash curry with spinach.

Frittata with spinach, potatoes, asparagus, cherry tomatoes
Veg stir fry with noodles (baby corn, carrots, mangetout, bean sprouts, cashew nuts)
Veg curry or Thai veg curry
Macaroni cheese
Veg soup with giraffe bread
Jacket potatoes with cheese and beans
