Interesting and different mince meal

We've got a huge packet of mince from Costco, most of it is getting frozen, but looking for an interesting, different mince based meal (we're all a bit bored of chilli, lasagne, meatballs etc) for this evening, any suggestions? Got a pretty well stocked pantry, Asian is always popular in this house too!

Mabo tofu - a spicy Chinese mince dish with tofu (but you could leave that out, if you want) to be served with rice. I would just buy a jar or sachet of sauce for it.

Mince and onion pie. (Like a budget steak pie).
Mince "casserole" made the same way as a beef casserole and served in Yorkshire puddings.
Beef burgers.
Meat ball curry.
