Cooking diced chicken from frozen

Does anyone do this and if so how do you do it?

19yp DSS finishes work at 9/10pm ish and we don't know if he will be eating with us or not - tonight as an example he came in with his gf (who had also not eaten) and asked for food. We didn't know they were coming and all I could offer was oven chips and chicken kiev from the freezer but they're trying to eat healthily and didn't want it. Fair enough! We need to do a shop and I asked what we could have in for occasions like this and he said chicken and veg and I was just wondering if I might be able to get a load of chicken breasts - dice them and put some seasoning on like garlic powder/paprika and freeze them then if this happens again he can take a bag out - fry it up and have with microwave rice and veg.

Does anyone do this and if so can you tell me how? Read conflicting things online.

Most supermarkets do chicken/meat you can cook from frozen. It’s probably not as good quality but it exists.

If doing yourself I would imagine it will clump together when frozen so you could try open freezing ( separate chunks on a tray) then combining in a bag once frozen. Try frying from frozen and see how it goes. Buying it possibly easier but I would do a tester on one fillet and see how it comes out

Why not just season chicken breasts whole and he can cut them up in the pan while they're cooking? I do that at home because I'm too lazy and don't like the ick factor of washing chopping boards after cutting chicken on them.
A sharp knife easily goes through a frozen chicken breast.
