One of my favourite veg recipes is baked cauliflower, it looks fancy, takes far less time than the recipe suggests, and has a tahini / yoghurt dressing which is deceptively filling. You can serve just with the grain or with extra salad / greens.
Take a whole cauliflower head. Bring a pan of water to the boil, add a tsp of turmeric, 2 cinnamon sticks, a few cardamom pods, two star anise, and when boiling add the cauli head, poach for 5 - 7 mins - it needs to still be firm not cooked through. Remove the cauli (keep the spiced water) and let any excess water drain off the cauli.
Place the cauli on a baking sheet. If you're not avoiding oil and salt, then rub it with oil and salt. Stick it in the oven for 35 - 40 mins at 180.
While it cooks, use the spiced water to cook a grain - something with heft like brown rice or giant couscous. Add a handful of raisins or chopped dried apricot with two minutes to go if you want. Fish out the cardamom pods etc on serving (or warn people to look out for them).
Mix a sauce with 2 parts unsweetened soy yoghurt to 1 part tahini, a dash of lemon juice, thin with water if needed.
When ready to serve, put the cauli on a plate, cover in the sauce, then top with flaked almonds and frozen pomegranate seeds. Slice and serve with the spiced rice.
