What do I serve with this???

Hi All.
I am doing dinner for tomorrow evening - I would like to serve a side of salmon marinated in honey/soy/chilli/coriander/spring onion/lemongrass/ginger etc etc. It's a Jamie Oliver recipe and looks lovely. And easy. What could I serve it with? I fancied a salad of cucumber/tomato/mint/parsley/dill/mint all chopped finely with pomegranate dressing and pomegranate seeds. What could I add to this?? I need a rice/potato/quinoa/giant couscous type side. Please help oh foodie people. I am stuck.

Baby new potatoes, tossed with a little olive oil, salt (and herbs if yoy like). Bake in a dish or a tray in the oven for around 40 minutes on 200 degrees.

Pilau rice of some sort. Or rice with mixed veg in it.

You could make mushrooms in tomato and garlic sauce as a side. What sauces and or dressings are you serving ?

The salmon has some distinctly Thai flavours, so I’d serve it with jasmine rice. Mint and pomegranate probably wouldn’t go with that. The salad has a lot of different flavours and if you want the salmon to be the star of the show, I’d go for a more muted, simple salad. I’d probably go for a green veg stir fry - tender-stem broccoli and mangetout perhaps.

I was just wondering if the salad would go - maybe not then. It's definitely Thai flavours, but not sure how to serve noodles nicely. Maybe jasmine rice is the way to go, maybe with stir fried broccoli or some such thing.....I don't want to over flavour the side dishes....
