Black garlic

I was given a pot of two bulbs of black garlic for Christmas. Can I use it like normal garlic? Anybody got any black garlic specific recipes I can try?

I did try it a few years ago at the Good Food Show and remember it being soft, slightly sweet and not as potent as normal garlic so I'm unsure about using it in the same recipes I would with normal garlic?

I love black garlic, but I don't use it as an ingredient, more as a garnish for salads etc. I've tried adding it to bolognese etc., but it gets a bit lost, which is a waste of its tremendous flavour. Finely sliced (difficult, as it's sticky!) pieces over salad tomatoes, or roast potatoes - that works. I think using it in potatoes dauphinoise might work too - but nothing with a pronounced flavour of its own. HTH :)

Sabrina Ghayour does a lamb shank tagline with black garlic - have eaten it but never cooked it!

No, you don't use it like fresh.

salad topping, on cooked meat/fish, in dressing for couscous etc

It's sweet, savoury, rich, not biting garlic freshness.

@Palavah Thanks but we're not lamb lovers so will give that one a miss!

@SapphosRock That looks lovely! I may just try that 😋

I had it at a posh restaurant recently and immediately went out and bought some.

In the restaurant it was sourdough toast, spread with the black garlic and then some sort of posh m mushroom mix on top. It was sublime.

All I've done with it so far at home is:
put it in a pie, where it got a bit overwhelmed by other stuff

mashed a few cloves of it and stirred into a creamy/cheesy sauce for mushrooms - this worked well

They serve black aioli in miller and Carter with the calamari.
