Hob broken - need quick veggie oven only help!!

My hob has cracked in two - dd and her bf are staying and both are vegetarian. So not like real visitors to entertain but would like nice food. I have a grill /oven/microwave/slow cooker/rice cooker.

Any suggestions please? Have already had pizza and have had the thumbs down for jacket potatoes!!

Luckily it happened on Boxing Day.

Can't boil pasta - can I use fresh in bakes?? Never done so - wd need to be wholewheat for our visitors.

Rice in microwave, curry or bean chilli in oven.

Or puffpastry tart with veggies.

Roasted veg and veggie burgers.

Could roast a - peppers (red and yellow), red onion (quartered),tomatoes, courgettes and at the end of cooking time throw in some feta and kalamata olives? Eat with crusty bread (pre-warmed in oven); salad etc. If you have houmous you could cut up some pitta slices having warmed pitta breads in the toaster...(as dip before hand)
