Homemade marzipan v shop bought

Just about to ice my Christmas cake. This year I made marzipan rather than buying ready made. Suddenly realised that it has egg in it. Normally once we have cut the cake it just stays in a cool place covered with foil but if there is raw egg in the marzipan does that mean it wont last as long?!

I have also made my own marzipan this year for the cake. I put the marzipan on the cake about 10 days ago and then I left it in a cool dry place to allow the marzipan to dry and harden. Then I royal iced the cake yesterday. I am led to believe the 10 days or so leaving the marzipan to dry and harden is part of the process so that it does not go off. I know my comments are not much help really now as we are close to Christmas but how long do you need the cake to keep? If you marzipan the cake today and ice it on Tuesday leaving as long as possible I am sure the cake will keep a little while.

Just about to make my own marzipan for the first time, as the shelves seem to have been stripped bare of marzipan in this part of the country.

So watching with interest, but a shedload of sugar preserves anything doesn’t it?

Planning on using the Delia recipe, is it okay?

Delia is reliable for most recipes sent she? My recipe is a good housekeeping recipe using ground almonds, eggs, sugar and almond essence so that it does taste almond flavoured. If you don’t add almond essence I find marzipan to have little flavour.

I found out this afternoon that the raw egg is ok as the sugar and lack of moisture (once its covered in icing) stops it from going bad. Thank you for the replies. I don't know what came over me this morning. I just suddenly panicked about the raw egg!

marzipan shouldn't contain egg! mr niederegger certainly doesn't

Just used a BBC recipe: sugar, icing sugar, ground almonds, vanilla, orange juice, eggs. Bunged it all in the Magimix and .... perfect marzipan. Who knew it was so easy? I won’t be buying it any more.
