Anyone want to share their favourite recipe?
I'll go first.....
Beef & Chorizo stew

1 large pack diced beef
100g Chorizo chopped into small cubes
1 onion
1 red pepper
250g mushrooms
1 tin tomatoes with chilli
1 beef stock cube
1/2 cup of water
Splash of red wine

Stick it all in with tomatoes on top, 35mins pressure cook then wait for pressure to release.
Thicken with a little cornflour before serving.

That sounds great! I have only had my instant pot a week and so far have only done sweet potatoes and am trying 4 min roast beef tonight. Hoping to do butternut squash risotto tomorrow.

I made rice pudding tonight.

100g pudding rice
50-75g caster sugar
25g butter
600ml mix of milk and cream (I used a third cream tonight)
Vanilla or nutmeg to flavour

All in the pot and cook on high pressure for 15min. Natural pressure release.

I prefer it done in the oven but DH and the DC love it. Probably the thing I make the most in the instant pot.

@midgetjen how was the beef? I’ve bought beef for Christmas dinner and haven’t decided whether to pot roast or instant pot yet.

I made the rice pudding last night was good. V like ambrosia, the grains were quite firm. I think I slightly prefer the SC version but that’s good if you have a sudden urge!
We also cook whole chicken in ours which comes out so succulent.

@notmymug it was great actually, and really easy. We used a smaller joint than the recipe I found without adjusting the time so it was a bit more well done but was still very tender. I am going to try a bigger joint next time and aim for medium rare :)
