Your best stuffing recipe

Can't decide on a recipe for stuffing this year. I would like to try something different. What recipes have worked really well for you.

I use two different stuffings. They both go in the same cavity in the turkey, but side by side, so they’re both equally accessible when you’re scooping them out to serve.
One is plum and ginger, the other is apricot and chestnut. Both are spiced and very colourful - the plum deep purple and the apricot bright orange.
For the plum and ginger, drain a can of red plums, stone and roughly chop them (or chop stoned fresh plums, but they’re harder to source at Xmas), add some ginger purée, cinnamon, powdered clove, white breadcrumbs and mix together. If it’s a bit dry, add a little of the syrup from the can.
For the apricot and chestnut, roughly chop a packet of soft ready to eat cooking apricots, mix with a packet of unsweetened chestnut purée and add a little cumin and coriander (both powdered). Mix well.
My DC have enjoyed these at Christmas for nearly 30 years now. Leftovers are very nice with cold turkey buffet lunches too.
